We just received a new shipment of Ethiopia Yirgacheffe coffee and this particular coffee come from Kochere.The Kochere district is well-known for producing some of the best washed micro-lots available in Ethiopia.
For those that are unaware, Kochere is one of the districts in the Borena zone, found 25 miles south west of the town of Yirgacheffe. Kochere’s population is around 10 000, most of them having coffee as their main source of income. This coffee is a blend of various indigenous heirloom varieties.
In Kochere, coffee cherries are being delivered by smallholder farmers to the mill, where the ripe cherries are being processed using the traditional wet processing method often used in Ethiopia. The skin of the fruit is removed before the coffee undergoes a fermentation followed by washing to remove the remaining mucilage. Then, the coffee is dried on raised beds – tables with a mesh bottom to allow for air circulation.
